Bring up the sides of the foil to the centre (leaving plenty of airspace for the steam) and fold over 2 or 3 times to ensure an airtight seal. To complete the seal fold each of the remaining ends in 2 or 3 times as well. To serve, simple place the foil pouch onto the plate and carefully open the top seam.

covering sauces and poached fruits A circle of Multix Bake cut to fit right on top of the liquid when poaching ensures that the fruit does not discolour from contact with the air.
